staying healthy : almond-stuffed dates

There is really no appetizing way to present these pictures to you, because dates stuffed with almonds are just plain unattractive. But I did the best I could because I really want you to try this and not be completely grossed out:

People, I'm telling you, this is magic. The dates are chewy and sweet and the almonds are crunchy and salty, and we all know what that means: a snack match made in heaven. It's the best of both worlds...AND it's healthy!

I've heard from a few people that almond-stuffed dates are the best thing since sliced banana bread, but I didn't really believe it because it didn't sound all that appealing to me. Dates and I are hardly BFF's and while I enjoy a good almond every now and then I'm not partial to snacking on them. If healthy snacks are my aim I'm much more likely to reach for a piece of fresh fruit, a cup of Greek yogurt, or things dipped in hummus. And considering almond-stuffed dates a legit dessert option? Blasphemy. If it's not chocolate, it's not dessert.

But I've officially been won over...because these things are addictive and incredibly good. I even eat them for dessert...with a square of dark chocolate, of course.

I've been using Dole's Whole Pitted California Dates and Blue Diamond's Oven Roasted Almonds with Sea Salt. Which makes this snack not only easy, but portable and incredibly affordable.

Seriously...it's the best combination since PB&J. Just try it and see!
